Hints To Housewives Preserving Figs And Spreads
Select firm ripe figs and can them promptly to avoid bruising and texture loss. Green figs wrinkle and sunburned ones become tough so grade carefully and precook briefly then pack and steam. Use warm syrup made from the fig water and sugar, then seal and process. Spiced figs require spices and a long boil to render translucent fruit and concentrated syrup. Fig spread uses overripe fruit cooked with sugar to a thick finish for sandwiches and desserts.
