Rhubarb Freezing Tips From County Extension
Homemakers can freeze rhubarb easily says Helen M. Tucker. Select young stalks free of bruises, wash and cut to fit containers, do not scald, pack without sugar, freeze promptly or refrigerate first. For juice base wash stalks simmer with water, strain, sweeten, chill, and freeze in jars with proper headspace.
