Fresh pumpkin prep for cooking yields puree
Fran Gerling advises washing the rind and cutting the pumpkin in halves. Bake cutside down on a jellyroll pan at 325 degrees for 45 minutes until fork tender. Cool ten minutes, peel rind, remove seeds, then puree pulp in a processor or mash. A five pound pumpkin yields about four cups of puree. Seeds may be toasted for nibbling.
