Maple Syrup Making Sparks Winter Camp at Hueston Woods Park
In Hueston Woods State Park a seasonal sap collection and syrup operation runs from mid February to mid March. Park employees Cecil Sorrell Martin Keehneon and Robert Roemer guide tours while a wood burning cooker boils sap to 219 degrees. The facility yields 15 gallons of syrup yearly from 40 to 50 gallons of sap per gallon, with syrup used for pancake breakfasts and any surplus donated to an orphanage.
