Meat alternates vary Lenten menus

Health advice from Geraldine Acker of the University of Illinois outlines meat substitutes for Lent. Two ounces of cheese provide the same protein as lean meat, two eggs equal the protein, two ounces of fish substitute, and three tablespoons of peanut butter meet the protein need of 2 ounces of meat. Dried beans and peas offer strong protein, with half to three fourths cup portions matching 2 ounces of lean meat. Nutritionists recommend two or more servings daily from meat substitutes or protein sources.
