Illinois Farmers Outlook Letter on Dairy Stabilization
The dairy industry shows a stable trend with little change since 1955. January to May 1963 production was 5.46 billion pounds, up 1 percent from last year due to an extra February day. Per capita milk consumption has declined, while population growth offsets some demand. Prices for milk in major cities averaged 46 cents per half gallon for the first four months of 1964, with farm prices up about 2 percent.

Perishable greens and vegetables kept best at home when refrigerated in a hydrat or. moisture retention helps retain vitamin A and vitamin C. After five days at 40 degrees F leafy greens and broccoli lose about half their ascorbic acid though still remain good sources. Green peas keep nutrients best in pod. shelling requires plastic bags. Cabbage stores well below 40 F for two months. Ripe firm tomatoes hold nutrients longer. overripe tomatoes lose ascorbic acid quickly.
