Older-layer eggs yield higher value in processing
USDA ARS researchers find eggs from older laying hens contain more yolk and solids, less shell, boosting value for processed products by about 2 percent in the first laying year. Cake performance remains similar, with 70 percent of processed eggs used in bakery foods. Cooperating California producers provided eggs from White Leghorn flocks for age-based comparisons.
