Vegetable storage tips from Penn State expert

W B Nissley, extension vegetable gardening specialist at Penn State, outlines moisture temperature and ventilation needs for storing garden vegetables. He favors barrel pit storage for cabbage and roots, with a 45 degree placement, buried, vented with a lid, and extra dirt or straw as weather worsens. He notes a short crop year and high winter cabbage prices, and offers a kraut packing method using small jars with salt sugar juice and proper fermentation steps.
