Delicate Birds Nest Soup from Siam Islands

The nests are built by salangane birds in the Malay Archipelago and Siam islands. In 1908 harvest reached 18 000 pounds worth over 100 000 dollars. The nest forms from algae gathered by the birds not saliva. Harvest runs April to September with theft of nests before eggs. Third nest remains unmolested, then sold. Soup is made by washing nests, eight hours cooking, then chicken broth, seasoned and boiled briefly. Occidental tasters find it palatable resembling chicken bone.
