Preserving Tomatoes From Albany Cultivator

The Albany Cultivator shares a method to dry and store ripe tomatoes. Dip in scalding water peel and slice, spread on plates, bake until dried, then cool and store in paper bags in a dry place. Rehydrate before use for stews or mince. Tomatoes also make good dry snacks and sauce with a little water.
