Dairy Facts: Graded Cream Could Increase Farmers' Receipts

South Dakota butterfat producers could gain about 5 cents per pound by adopting standardized cream grades, says the department of farm economics at South Dakota State College. If 1922's 81,761,070 pounds of cream had earned a 6 cent premium, farmers would have gained over one and a half million dollars, though some extra costs might apply. A market that pays flat rates undermines quality grading unless enough high grade producers join to sustain grading. Lower quality cream would likewise suffer financially under proper classification.
