Secret bunuelos recipe spreads from Kansas kitchen

Mary Louise Ortiz reluctantly shared her family bunuelos recipe for Redbook magazine after persistent requests aided by Governor Carlin. The secret lies in the syrup, poured over the fried buns rather than sprinkled on top. Redbook photographed the baked treats for a Prairie Christmas feature, with Ortiz adapting the syrup to yield a gallon at a time for El Conquistador cafe use. The Ortiz clan, numbering 38, gathers yearly around a long table where bunuelos and tamales join the holiday feast alongside roast turkey and ham.
