Cider Preservation Plan from Farmers Letter
Farmers are advised on preserving cider during active fermentation. Add white sugar at half to three quarters of a pound per gallon as fermentation completes. Then add one eighth to one quarter ounce of lime sulphite per gallon in the cask, dissolved in a quart of cider and mixed before returning to the cask. Let stand several days before bottling or serving from the cask.
