South Dakota urged to build more creameries

Brookings March 13 South Dakota needs more creameries to convert all state produced cream into butter and other products. Dean C Larsen of South Dakota State College cites that about half of state cream is shipped out for processing. A local creamery producing 150000 pounds of butter yearly could operate efficiently. Larsen lists three benefits including higher quality butter, better markets and prices, and educational outreach on dairy products. He notes savings in transit and time between production and manufacture, with broader impact on livestock breeding and dairy production.
