Canning Greens By Oven Process With Lemon Juice
The guide advises oven canning greens for three hours at 250 degrees F. Adding one teaspoon of lemon juice per quart reduces processing to two and a half hours without changing flavor. Prepare greens per directions, place sealed jars on racks 1 to 2 inches apart, smaller jars on top if using two racks. Store jars in a clean dry cool airy area and label contents and date.
Proper handling of canned vegetables to prevent spoilage
Inspect each jar carefully before use and discard any jar with unusual odor or appearance. Boil canned vegetables for five minutes before serving. Occasionally one jar in a batch may spoil despite proper sealing.
