Lard Outperforms Other Fats In Cooking Tests
American Meat Institute studies rate lard at 100 percent shortening power versus 74 percent for animal stearine and 73 to 79 percent for hydrogenated cottonseed oils. Trials show 25 percent less lard can equal full oil in pie crusts, while a 73 pound load of lard matches 100 pounds of oil for same shortness. The research highlights lard’s digestibility, plastic range and economy as key cooking fat benefits.

Keep Prices Hold Steady to Spur Farm Production Says Christiansen
Beadle County farmer Nels Christiansen argues steady prices will push farmers to raise more food. He notes profits from selling hogs at higher prices covered feed costs, and recalls farming changes since 1920 including drought resilience, cane and Soon er Mile sorghum cultivation. He and his son Christie run a joint operation using shared machinery, with emphasis on proper machinery upkeep and tractor maintenance to meet ahead of a likely labor shortage.
