Homemade Fresh Cream Cheese Method From The Trisoxe
The article explains a simple process for making fresh cream cheese at home. It advises adding enough runner to the morning milk and coagulating at 70 degrees for two to three hours, then aging 20 to 24 hours. A hair sieve is used as a mould, whey is poured off, and curd is cut and drained before adding cream to equal quantities of milk.
