Can Fruit Juices Be Canned for Jelly Later

Miss Margaret McPheeters of the University of Maryland extension service advises canning fruit juices without sugar and little water for later jelly making. Use three-fourths ripe fruit and one-fourth under-ripe for pectin. currants and raspberries are rich in pectin. Can only small batches and test jelly by the sheet method. Combining currant juice later with other juices yields excellent jelly.
