An Iowa State University Extension nutritionist says Americans do not eat 170 pounds of red meat per person per year. She explains carcass weight includes fat and bone not eaten and that retail package figures also include non edible parts and cooking losses. The Daily Food Guide suggests servings of two 2 to 3 ounce portions of protein daily.
