Pressure cookers save time and nutrients in meals
Pressure cooking cuts meal prep time to about a third of conventional methods and helps preserve nutrients. Says Iowa State University nutritionist Phyllis Olson, noting vitamin C retention improves with pressure. Affordable models start around 15 dollars, and shorter cooking uses less fuel, allowing cheaper meat cuts to be used more often.

Make your own oat flour at home for baking
Dunn County extension home economist Bonnie Wigen explains how to grind rolled oats into flour. Blend 1½ cups uncooked oats for about 60 seconds to yield about 1 cup of oat flour, which stores about six months in a tight container. Use up to one third of all purpose flour to maintain texture, noting gluten differences.
