Rabers plan to make Swiss cheese in Thorp plant
Urs Rabers operation aims for serious Swiss cheese with 90000 pounds of milk daily, 15 staff, and a Texas distributor. He began exclusive production on June 11 with Raber's Swiss Cheese and will add Baby Swiss in about two weeks. He emphasizes quality milk from 70 to 80 area farms, careful culture management, and strong farm relationships.
