Jerusalem artichokes turn out not to be artichokes
Terri Gabriell explains Jerusalem artichokes, edible underground tubers that resemble a cross between potatoes and ginger. Easy to grow, they spread quickly, require sun and loose soil, and can be eaten fried mashed or scalloped. Cultivation notes include fall or spring planting, mulching, and cautions about overgrowth. Readers can mail letters to the Los Angeles Times Syndicate column.
