Syl Harris, a Wisconsin cheesemaker, will test direct sales in Florida this week with his white truck labeled Wisconsin's World Championship Colby Cheese. If successful, he’ll return with more cheese before Christmas to build alternate markets, offer natural cheese, and receive payment immediately rather than waiting 7 to 10 days.
