Dressing Percentage Governs Price in Beef Carcasses
University of Tennessee extension notes explain how dressing percentage drives meat costs. A 1000 pound steer at 60 percent yields about 600 pounds of beef for $70 total, about 11.7 cents per pound, cheaper than a 1000 pound steer at 50 percent.
Dressing yield in cattle tied to age and form
The dressing yield ranges from 60 to 70 percent of gross weight, rising with age and maturity unless stunted. Fat cattle generally yield more, with compact, finished animals giving the highest edible product. Major slaughter losses come from the paunch, intestines, blood, head, pluck, feet, liver, tongue, hide and tail, totaling about 40 percent, with byproducts often the packer’s profit source. When a neighbor undercuts you, consider if they see more real meat in their lot and can pay accordingly.
Suggestions to corn club boys selecting exhibits
Instructions urge uniform ears for contests. Favor cylindrical ears of similar length and circumference with straight row shape. Kernels should be uniform in color and size, cobs all white or all red per variety. Do not trim tips. avoid mixed cob colors. beware last year’s uneven examples.
