Beef labels to brand young bulls as bullocks for cheaper meat

Agriculture Department officials unveiled a plan to speed consumer acceptance of beef from young bulls by labeling it bullock rather than bull. They propose tightening grading standards for bulls nine to twenty four months old to match steer beef, but rejected labeling that would remove the bull term entirely. The plan would mark graded beef from steers as choice and from young bulls as choice bullock, with a comment period open through June 5.
