Cold storage for farmer pork advocated in Texas
County agents push cold storage rooms once used for beer to store and cure pork killed by farmers. George Stephan, Benson, and International and Great Northern official Bruce promote cheap, supervised curing with salt at about a cent and a half per pound. They argue it saves feed, reduces hog losses from cholera, benefits local packers and butchers, and supports peanuts and sweet potato warehouses while claiming curing shrinkage is about eight percent.
