The article traces early ice cream origins to a French chef serving the Duc de Chartres in 1774 and notes Lord Bacon recognized congelation but did not foresee modern uses. It mentions iced drinks and water ices reached Parisian epicures a century and a half earlier, likely via eastern travelers who tasted sherbet. It contrasts English indifference to iced puddings with the present century.
