Home Canner Safety Tips and New Bulletin
The bulletin B-194 on Home Canning of Fruits and Vegetables is available through County Extension Agents. Check pressure canner gauges and safety valves, clean openings, and ensure lids seal properly. Store finished jars in a cool dark dry place after testing seals.
Food Safety Note on Home Canned Goods
The guide warns canned foods stored in warm damp areas may change color and flavor. Use all home canned foods within one year. Freezing does not spoil but may alter texture. If a seal breaks or jars leak, discard or freeze until use.
