Turkey Costs Fourpence in Early Colonies Feasts
A Vermont Extension nutritionist retraces 350 years of turkey purchasing and cooking. In Georgia or Delaware turkeys cost about fourpence from Indians, Philadelphia markets offered birds up to 50 pounds, and Massachusetts allowed winter freezing. Colonial recipes include chestnut stuffing from Maryland, pecan stuffing from Charleston, and oyster stuffing from New Jersey, with Scotch settlers baking butter milk scones beside the turkey. Today turkeys are more plentiful and served in varied ways.
