Helpful Hints for Cooling and Storing Cookies
Practical baking tip advises removing cookies from sheets immediately after baking. Use a wide spatula to transfer to wire racks. Let cookies cool completely before storing to maintain texture and freshness.
Quick Method for Soft Tortillas and Pancakes
To keep tortillas soft for filling, heat briefly in oil in a small skillet and roll. For thin French type pancakes, pour batter into a hot buttered skillet held off heat and swirl to cover bottom, cooking quickly. Sour cream has fewer calories than mayo, so mix for a lighter dressing.
