Poor Man's Food Prompts Fish as Prime U.S. Staple
Dr Mary E Penniington head of the Governments Food Research Bureau argues that fish serves as the poor man's food in the United States and helps preserve soil fertility. She notes meat and crops deplete soil, while fish multiply abundantly in the sea and remain largely untapped. She calls attention to consumer unfamiliarity with many fish varieties. She cites ignorance about frozen fish versus fresh and suggests price and palatability influence choices, especially among foreign born residents in crowded cities.
