Preserve of relishes for meats includes watermelon rind and gooseberry relish to accompany cold sliced meat. Instructions describe soaking rind with alum, then cooking rind in syrup with spices, and sealing in sterilized cans. Gooseberry relish is noted as an old fashioned "goody" for meat accompaniments.
An old kitchen note describes making gooseberry pickle with 3 quarts green gooseberries 1 quart vinegar 3 cups sugar 3 more cups vinegar 2 cups salt 8 to 4 pound lemons 1 pound powdered ginger 1 to 2 pounds red peppers 1 1/2 pounds seeded raisins 1 cup mustard seed. Gooseberries are prepared peeled and unripened then boiled with vinegar, cooled, mixed with onions peppers crushed mustard seed ginger raisins and remaining vinegar before reheating and jar sealing.
A recipe for preserving chopped green apples and onions with salt brown sugar and spices. It instructs peeling chopping onions dissolving salt and sugar in vinegar then adding other ingredients and cooking until tender. The mixture is ladled into sterilized jars and sealed.
Grapes are simmered with water then mashed and strained for a base. Brown sugar vinegar and spices including allspice cinnamon cloves nutmeg and cayenne are added and boiled to thick consistency before sealing in sterilized bottles.
Six green peppers and six red peppers are chopped fine with minced onion. Salt sugar and vinegar are added then simmered about thirty minutes. Pack into jars seal store in a dark place to preserve color.
