Gelatin Shrimp Mold For Salad Service
Sprinkle gelatin over 2 cups cold tomato juice to soften. Heat remaining tomato juice to near boiling, add softened gelatin sugar and Lea and Perrins. Stir until dissolved. Chill until slightly thickened. Drain shrimp rinse cold and drain again. Fold into gelatin mixture. Turn into molds chill until set. Unmold on salad greens garnish with cucumber and serve with mayonnaise. Makes 4 to 6 servings.
