Barbecues have a long White House tradition beginning with Thomas Jefferson. Lyndon B. Johnson hosted the first Texas style ribs barbecue. Jimmy and Rosalynn Carter held a pig pickin for about 500 guests including foreign dignitaries. A 2007 HPBA study found 77 percent of U.S. households own a grill or smoker and 95 percent of grill owners used theirs in the past year. Over 17.4 million new grills were shipped that year. Safe grilling guidelines for outdoor use and food handling

Use gas and charcoal grills outside only and position away from siding railings and branches. Keep children and pets three feet away and supervise grills at all times. Do not add lighter fluid to hot coals. Spray the grill rack with cooking spray and turn food with tongs to avoid piercing. Let meats rest 5 to 10 minutes before serving for moisture retention.
