Home Canning Equipment And Material

Safe canning of fruits and vegetables requires care in every step of the process. Pans, jars and all utensils must be absolutely clean. The ordinary wash boiler with a rack may be used or any kettle with a light fitting cover. The rack must be at least three quarters of an inch from the bottom and raised to allow water circulation. For processing fill the sterilizer with steam water two inches above jar tops. The time needed varies with the food. Steam pressure cookers are recommended for vegetables and meats. Oven canning is advised for fruits and tomatoes with a well insulated oven kept at 250 to 276 degrees F without top heat. Jars should be tested for leaks by inverting after closing. Ring tops should not be used if cracked. Jar rubbers must be fresh each season. No magic in canning. choose fine produce for best results.
