Alas Poor Diner Beef Costs Rise Across the Chain

Officials in Canada explain how a two year old steer weighing about 1000 pounds yields about 600 pounds of carcass after dressing and another 140 pounds of saleable cuts after retailer shrinkage. Research on Chicago markets shows high priced cuts such as porterhouse amount to about 40 pounds while hamburger and stew beef total around 160 pounds of saleable meat.
