State Drains Millions From Home Dairy Supply
A state dairy report shows less than half of butter consumed is made locally. Spokane Seattle and Tacoma bought 3,588,760 pounds of eastern and California butter, with other towns adding about 400,000 more. Imported cheese surpassed home output with 1,163,500 pounds entering three cities and 250,000 more by elsewhere. Total annual drain on butter and cheese estimated between 1.1 and 1.2 million dollars. In 1900 Spokane bought 653,000 pounds of eastern butter and 180,500 pounds of outside cheese.
