Texas Deer Production Shows Smaller Meat Yields

Professor Sidney W. Wilcox of Arizona State University reports Texas leads in deer production from all 50 states. Texas field dressed deer average about 50 pounds yielding 25 pounds of boneless meat, far less than Minnesota’s 138 pounds and 70 pounds boneless meat. The survey notes 16 000 mule deer killed in 1969 and 1970 in Texas with boneless deer valued at about 5 034 285 dollars in 1969 and 6 088 297 dollars in 1970.
