Buffalo Meat May Become Common on Butcher Counter
Secretary Wallace has been tasting buffalo meat, a rare delicacy, but it may become common as buffalo numbers rise. The bison herd on the Montana range has grown, enabling experiments with long distance shipments to eastern markets. About 4,509 head remain in the United States and 11,500 elsewhere in North America. Experts say their perpetuation is assured with ample supply for exhibition and breeding, creating a yearly market surplus.
