Homemade cottage cheese from skim milk and lactone
Fresh curds can be made by souring skim milk with lactic acid culture. Homemade cheese is purer than commerce, tasting nutritious and versatile. Full milk creates fresh cheese, a complete ration with rice or bread, and pairs well with macaroni for higher protein than meat. Don’t toast or boil, and avoid mixing with fruits or vegetables.
