Homemade Cottage Cheese From Skim Milk and Lactone
Cottage cheese can be made from skim milk by souring the milk with a lactic acid culture. Homemade cheese is purer and fresher than commercial varieties, with full cream options available by using full milk. It is a safe nutritious food, forms a complete ration with rice or bread, and pairs well with macaroni due to higher protein content. Do not toast cheese or boil it, and avoid mixing with fruits or vegetables.
