Dietetics Meet Predicts Rising Food Prices

At the Ames Dietetics Association meeting Fern Gleiser of Iowa State College forecast slightly higher food costs in 1941 due to stronger domestic demand offsetting weaker export demand. She cited consumer income growth, steady total food production, and defense-related demand as influences. Dr. Margaret G. Reid discussed the Federal Surplus Commodity Corporation food stamp plan, noting 1.5 million relief and WPA families participate and blue stamps now represent 4 to 5 percent of total food sales. The morning program, chaired by Hazel Swim, featured Edna Shalla and ISU nutrition faculty including Margaret Ohlson, P. Mabel Nelson, and Lenore Sullivan.
