It details ingredients, steps, and optional additions like walnut meats or whipped cream, plus method for a carrot sauce and oven finishing.
Three large ripe quinces are peeled and grated then cooled. Mix four pounds sugar with one cup boiling water, pour over the quinces and stir five minutes. Skim as needed. The mixture yields about two quarts.
