Maple Sap Flows as Canadian Farms Begin Sugar Season
The spring sun melts snow and triggers a maple sap harvest across Ontario and Quebec. Farmers expect about 4,000,000 gallons of maple syrup valued at over 14 million dollars, with trees yielding 15 to 20 gallons of sap per tree and 1.2 to 1.6 quarts of syrup. Saint Alexandre College near Iron Sides, Quebec, operates a large sugaring unit from 10,000 trees.
