Free choice makes Salem food eatable in high school
Salem Illinois AP reports Salem High School offers free choice meals with a la carte options and off campus dining. Principal Kerry McClain notes a low 1 to 2 percent waste rate among 300 to 400 daily cafeteria eaters from about 1,100 students. The district runs deficits of 12 000 to 15 000 yearly, views lunch as a service, and avoids junk food though vending machines sell some unhealthy items.

Cooks Hide Government Foods in School Meals
School cooks report disguising government donated foods to make meals more palatable. Myrtle Stewart of Galesburg schools says pumpkin pie cans may contain sweet potatoes, while chili can hide beans. Granite City’s Orval Overhulser notes red kidney beans are ground into paste for fortifying meals. Government beans and varieties are cited as unappealing to students, though workers defend the commodities as nutritious.
