How He Cures Pork Without Smoking It

Mr. P. C. Trayer, a farmer near Beeville, shares a longtime method for curing pork without smoking. He salts warm meat, drains heat, reapplies salt with borax, then seasons and packs in bulk for 3 to 4 weeks depending on hog size. After brushing off salt, the pork is repacked and stored in a cool place and reportedly keeps indefinitely with a taste close to fresh meat.

The tree sits over six feet tall at 6000 plus feet elevation beside a water spring a half mile away. The healthy tree about one and a quarter inches in diameter may have begun from an apple core dropped by a prospector or possibly planted by a Washoe man.
