Butter Quality Explained and Buying Tips
Dorothy Wilkinson of the University of California Extension describes common butter quality labels U.S. Grade AA and Grade A, noting AA is from sweet cream with strong aroma and even salt distribution. Grade A closely follows AA, with B and G as acceptable but lesser flavors, while nonstandard butter may be labeled cooking grade.

Replacement Ewes Recommended for Sheep Growers
University of California extension adviser Roy Parker promotes replacing ewes in California to improve wool and conformation. He argues that self produced ewes yield better market type and fleece, with lambs born at one year. He advises breeding at least half the flock to high type white faced bucks. He notes ewe lambs from mating would be kept as replacements.
