Electric Cooking at Spanish Pavilion Restaurant
The basement restaurant at the Spanish pavilion uses electric cooking under government rules to avoid coal gas or petroleum. Serving over four hundred meals daily, the setup includes a large 3 by 6 foot range, two broilers, two ovens, a hot water reservoir, a vegetable boiler, and a small heater.
Electric Cooking System Powers Large Kitchen
Eight fireplaces supply heat, four at 25 amperes and four at 20 amperes, with excess heat recaptured by intermediate plates and a regulator. Two broilers operate at high temperature from above to prevent fat odors, drawing 25 to 35 amperes. Two ovens provide adjustable heat, one bottom heated at 2 amperes and the other with upper heaters on multiple circuits. Daily roasting capacity reaches about 75 pounds of meat per operation. A 60 gallon vegetable boiler and hot water reservoir, plus a dual heater for coffee and a water bath, complete the setup. Built of sheet iron with asbestos insulation, it has operated regularly since May 1.
