Freezing Preserves Fresh Bean Flavor
Arizona Extension Service expert Elsie Morris explains how to freeze snap beans to retain flavor and color. Select barely ripe beans, wash, trim, and sort by size, then scald for 2 to 4 minutes depending on size, add time for high altitude, chill in ice water, drain, and freeze at 0 degrees or lower in moisture proof packaging.
