A rustic cassoulet recipe uses pinto beans cooked overnight in water, chicken, spicy sausage, bacon, vegetables, bouillon, garlic, thyme, wine, tomato juice, and parsley. Beans simmer on low overnight, then chicken and other ingredients join, cooking ten more hours on low and five on high before garnishing with parsley for six servings.
Slice tops from tomatoes and scoop pulp. Mix corn onion cheese and bread crumbs with pulp and season. Fill shells place in pan pour beer over tops and bake at 350 for 20 to 25 minutes. Yield 12 servings.
